Andy Hearnden

Founder and director

As an Executive Chef whose journey has taken him to the Head of Food and Beverage for a global brand, Andy is now helping others by applying his rich culinary experience and passion for working with high performing teams to deliver successful F&B experiences within the travel and hospitality industries.

Andy has led the kitchen of many great restaurants across London, Sydney and Melbourne including the Great Eastern Dining Room in Shoreditch, London at the young age of 24. From there, he continued to move into bigger roles and restaurants, constantly seeking to develop his kitchen, business and people management skills.

More recently, Andy was the Head of Food and Beverage at Emirates Leisure Retail ANZ and managed ten high functioning and highly engaged F&B teams across 120+ venues in Australia and New Zealand.

Katelyn Flood

Co-Founder and creative director

Our approach is simple: create authentic content that generates value to both the business and audience.

Specialising in PR, communications, website and social media strategies, Katelyn works with brands on how to best communicate their unique selling point and build their brand profile across multiple platforms.

Katelyn has managed marketing accounts for multiple brands in the F&B, tourism, retail and non-for-profit industries. Working with the client, she developed and executed PR and engagement strategies, website content, brand communications for both internal and external, social media strategies and plans, product launches, brand events, media collaboration and sponsorships.

Her work focuses on genuine storytelling that connects the brand to their audience.

AFL

Kitchen & Bar

AFL Kitchen & Bar opened in December 2019 in Melbourne Airport's Terminal 3 by Emirates Leisure Retail ANZ in association with AFL. This 110 seat restaurant and bar offers a wide range of gastro pub classics and pizzas to the large foot traffic through Melbourne Airport. It was the first airport bar to offer Carlton Draught's Brewery Fresh beer on tap. This project utilised Micros POS and inventory management as well as the Virtual Mgr FoodSafe app for food safety records.

Opened in March 2019 by Emirates Leisure Retail ANZ in Auckland Airport International Terminal. Wondertree is a UK family restaurant franchise owned by Boparan Restaurant Group. This project focused on delivering a 120 seat relaxing dining space with an approachable and family-friendly menu. Micros POS and inventory management and Virtual Mgr FoodSafe app for food safety records was implemented. 

WONDERTREE

Eat, Drink, Travel Happy

PENFOLDS

Wine bar and kitchen

Penfolds Wine Bar and Kitchen opened in February 2020 in Adelaide Airport as an extension of Penfolds cellar door at Magill Estate Kitchen. Offering an extensive range of Penfolds wine and a food menu to match, it was the crown jewel in the Adelaide airport's new redevelopment. The wine bar offered seating for 100 with a team of 35, and highlighted this prominent brand to both locals and travellers alike.

VANTAGE

Bar and kitchen

Opened in September 2019, Vantage Bar and Kitchen is the main sports bar in Auckland's International Airport. This large  project offered 200 seats across two levels. This sports bar focused on using local produce and serviced two of Emirates Leisure Retail's other venues; Aroha Cafe and Wondertree's prep kitchen. Producing sandwich, salads and a la carte prep, this use of space meant less sqm used overall allowing for more seats and greater staff efficacies.

ST. ALi

Cafes

Working with the team at Melbourne's iconic ST. ALi, Andy oversaw the food program for the day-to-day running of 16 cafes and the functions arm. He was part of the opening team for the Mercedes Me X St Ali concept store and lead for F&B contract in the opening of Happy Place with health and wellness influencer, Lola Berry.

HUDSONS COFFEE

Australia & New Zealand

Andy was part of the senior leadership team responsible in launching Hudsons Coffee in New Zealand. Starting with the first company store in Auckland's Domestic Airport, followed by appointing a master franchisor whose first shop opened in Wellington. Andy travelled to New Zealand with the procurement team to set up the complete supply chain, from the coffee beans (using the same recipe as Australia) all the way to the cheese for the croissants. The project focused on bringing the best of Australian Hudsons Coffee while establishing a unique New Zealand concept.
